Preparing for Success: Making Lunches the Night Before

Preparing your lunches the night before saves you so much time in the morning and allows you to ensure that your meal is ready and well-flavoured when it’s time to eat. Here’s how you can prepare these wholesome lunches ahead of time:

Mediterranean Quinoa Salad: Layer all the ingredients in a glass jar, starting with the dressing at the bottom. This allows the flavours to meld overnight, enhancing the overall taste of the salad.

Pitta: Sear the vegetables night before and store it in a glass container. The flavours will have a chance to meld together for a tastier sandwich. Toss the vegetables into a pitta in the morning to prevent the pitta becoming super soggy.

Preparing your lunches the night before not only saves you precious time but also ensures that your meals are ready to go when you need them. It reduced the number of things your brain has to focus on in the  morning and is the perfect way to maintain a healthy and consistent eating routine, even when life is very busy.

Recognising the integral link between diet and well-being is paramount, especially in the recovery from narcissistic abuse. The emotional toll of such experiences necessitates a focus on self-care, including mindful food choices.

Our suggested lunches above, the Mediterranean Quinoa Salad and Sautéed Vegetable Pitta Pocket, go beyond mere recipes. They’re crafted to support optimal brain function and stress reduction. To Conclude

Throughout my recovery I have had ups and downs with my food choices, I have eaten way to much sugar at times, way too much carbohydrates at times and way too much rice. Once I saw what was happening I couldn’t unsee it. My ultimate goal is to remove beet sugar and refined sugar from my diet completely. I would also like to be able to eat more raw plant based foods on a more regular basis. I generally don’t eat much bread because it gives me a headache and has done so for the past 7 years at least. I prepare myself for the worse when I eat bread because I know better. Like I said, once you see it, you cant unsee it. I will say this though. Your eating habits are a journey and you should be hard on yourself, you will fall off once in a while, just get up and keep going, practice make perfect, well, kinda!

I said all of this to say

……When you are mindful about your food you will automatically function better, emotionally, mentally and physically…….…This blog is a place where I give you real tangible guidance that will work to build your life up…….it’s a place where I prove to you that you have all that you need, for the life that you desire and it’s a place where I prove to you that……. you are not alone……. you got this and I love you.
